Recipe - Pork Loin Stir Fry

Ingredients:

1 - Pork Loin

2 - Onions

3 - Jalapenos

4 - Celery sticks

2 - Carrots

1 - Green Peppers

5 - Garlic cloves

1 - Butter stick

2 - Cups of Rice

Soy sauce

Spices – pepper, oregano, basil

Rice Preparation:

Cook two cups of rice according to the instructions (wash rice, boil water add 1 TBSP of butter or 3oz of oil and 2 oz of soy sauce then cook rice until soft).

Let rice cool for at least an hour, you can also make the rice earlier and put it in the fridge.

Pork Loin Preparation:

Marinate pork loin with oil and spices of your choice for 30 minutes then place it on the grill (indirect heat) or in the over until it reaches 160 degrees. Feel free to sear after reaching 160 degrees. Remove from over and let cool.

Begin your Stir Fry:

  • Add in 2 TBSP of butter and melt in sauce pan.
  • Finely chop 2 cups of onion and add one cup into the saucepan
  • Chop three jalapenos and add to saucepan. Cook on low to medium heat for 5 minutes until they soften.
  • Slice up the pork loin into thin wafers, or thicker if you prefer and add up to half a pound into your sauce pan. Keep in mind that the pork loin is already cooked, all you need to do it heat it.
  • Peel and crush up to 5 cloves of garlic and add them to your saucepan and simmer on low while you cut up the rest of your ingredients.

Add in your rice that was previously cooked (or you can serve the stir fry on top of the warm rice)

Add in your spices to taste, refrain from adding salt right now.

Finely chop up the celery, carrots, green peppers and mix them with your remaining onions from earlier and add them to your saucepan

Turn up the heat to high, while constantly stirring all your ingredients.

While stirring, add in up to 4 ounces of soy sauce or as much as your liking. This will take the place of adding salt.

Cook on high for no longer than 3 ½ minutes then remove from heat.

Ready to serve!
